If you need some new inspiration for an easy lunch or light dinner then these Halloumi Flatbreads are for you. Soft and fluffy flatbread loaded with salty, savoury halloumi cheese, creamy hummus and crunchy carrots, cabbage and pomegranate.

Lunch can be hard. I have fallen into the trap before of making the same boring sandwich every day or splurging weekly on takeaway or mediocre meal deals. If you came to this halloumi flatbread recipe because you need some inspiration for fresh and flavourful lunch ideas then I have you covered.

Easy Halloumi Flatbreads

Loaded flatbreads are such a great option for a quick and easy lunch or light dinner. Halloumi and Hummus is my favourite topping at the moment, but there are endless possibilities.

You can use store bought flatbreads for ease. My favourite are these Greek Style Flatbreads. You can pop them in the freezer and they defrost quickly in the toaster making them perfect for a quick lunch.

If you fancy making your own flatbreads then these easy yoghurt flatbreads are excellent.

Ingredients

  • Greek Style Flatbread – use store bought for ease or try making your own. Pitta breads work well or add the toppings to a wrap instead.
  • Halloumi Cheese – cut in thick slices and pan fried.
  • Hummus – Make your own (try my easy butter bean hummus) or use your favourite brand.
  • Pickled Red Cabbage – sweet and tangy, pickled cabbage is one of my pantry staples. I love it in cheese toasties and salad as well. Sarson’s is my favourite store bought cabbage or try making your own.
  • Carrot – I use this julienne peeler for thin and crunchy strips of raw carrot. You could also use grated carrot or simply cut into thin matchsticks.
  • Pomegranate Seeds – optional, but they add a lovely sharp sweetness which goes really well with the salty halloumi and creamy hummus.

Serving

Halloumi and Hummus Flatbreads are best served freshly prepared but you can also roll and wrap them up to transport or serve later. I like to eat them for lunch as is. You could add a simple green salad or bean salad on the side to make it more of a meal.

Halloumi Flatbreads are really easy to customise to suit your own tastes or to use what ingredients you have handy. Feel free to swap up the toppings with things like sliced onion, bell pepper, cucumber or lettuce. Instead of hummus try tzatziki or greek yoghurt mixed with a sprinkle of zaatar or a drizzle of your favourite hot sauce.

Ingredients

  • 3 slices halloumi cheese
  • 1 greek style flatbread
  • 2 tbsp hummus
  • 1 small carrot, julienned or grated
  • 2 tbsp pomegranate seeds
  • 2 tbsp pickled red cabbage
  • 1 tsp vegetable oil for frying halloumi

Instructions

  • Heat a frying pan or skillet over a medium heat and toast the flatbread for about a minute on each side to warm up. Alternatively use the toaster or grill to heat.
  • Heat the oil in the hot pan then add the halloumi slices. Cook for 1-2 minutes on each side until just golden then remove.
  • To assemble the flatbread, spread generously with hummus then add the cooked halloumi. Top with the carrot and cabbage then sprinkle over the pomegranate seeds to serve.

Notes

You can use store bought flatbread (I love these ones) or make your own.
