Halloumi Flatbread with Hummus

- 3 slices halloumi cheese
- 1 greek style flatbread
- 2 tbsp hummus
- 1 small carrot, julienned or grated
- 2 tbsp pomegranate seeds
- 2 tbsp pickled red cabbage
- 1 tsp vegetable oil for frying halloumi
Heat a frying pan or skillet over a medium heat and toast the flatbread for about a minute on each side to warm up. Alternatively use the toaster or grill to heat.
Heat the oil in the hot pan then add the halloumi slices. Cook for 1-2 minutes on each side until just golden then remove.
To assemble the flatbread, spread generously with hummus then add the cooked halloumi. Top with the carrot and cabbage then sprinkle over the pomegranate seeds to serve.
