Why You’ll Love This Chicken Teriyaki Noodle Stir Fry
If you’re craving a speedy dinner that is full of flavour and better for you than takeaway, Chicken Teriyaki Noodles are it. Tender strips of chicken breast, crisp vegetables, and noodles all get tossed in a moreish (and easy) teriyaki sauce.
The best part? It’s ready in just 20 minutes and completely customisable—perfect for busy weeknights! The sauce is made from staple pantry ingredients and is family friendly too – you can easily adjust the level of spice.
Baby Friendly Stir Fry
I love serving chicken stir fry for toddlers and baby led weaning. To avoid too much salt, I typically remove baby’s portion before adding the sauce. A little drizzle of sesame oil works a treat instead. You could also add a little low sodium soy sauce when age appropriate.
You may want to adjust how you chop the veggies and/or increase cook time to soften veg a bit more depending on your child’s skills – I recommend Solid Starts for more guidance.
Ingredients
Full ingredients list with quantities is included in the recipe card below. These are some helpful notes about the main ingredients including some swaps and substitutes where applicable.
For reference, I have written this recipe to feed a family of 2 adults and 2 small children. You can adjust the quantities as needed to feed your own family (or yourself with leftovers). There is also a handy slider on the recipe card to increase the portions.
- Chicken – I prefer breast, but thighs work just as well. Make sure to slice thinly.
- Noodles – My preference is dried egg noodles and I use 2 nests per adult, and 1/2 a nest per (small) child. Use your favourite, and cook as per the package instructions.
- Veggies – You really can use whatever vegetables you want! When I took the recipe photos I used a prepared bag of tenderstem, mange tout and green beans from the supermarket, plus a shredded carrot. I have used bags of ‘stir fry veg’ as well as sliced peppers, mushrooms, cabbage, broccoli and frozen peas.
- Stir Fry Sauce – Inspired by Teriyaki sauce, it is a simple mix of soy sauce, honey, rice wine vinegar and sesame oil. I add ginger and garlic paste (or you could use freshly grated). You can use reduced sodium soy sauce (recommended if cooking for kids.)
- Peanuts – an optional but very tasty extra topping. Toasted peanuts add a deliciously rich and nutty crunch. Cashew, almonds or sesame seeds also work really well as a garnish.
Tips & Variations
- Add Some Heat: Add a tsp or 2 of gochujang or chilli crisp to the sauce if you like some spice.
- Protein swaps: Try beef strips, prawns, or tofu instead of chicken.
- Mix up the Veggies: Use whatever is in your fridge—mangetout, baby corn, bell pepper and mushrooms all work well. For a super speedy dinner, use a bag of stir fry mix from the supermarket, or a couple of handfuls of frozen mixed veg.
- Make ahead: Mix up the sauce and slice the chicken and vegetables in the morning for an even faster dinner.
- Gluten-free: Use tamari instead of soy sauce and rice noodles instead of egg noodles.
- Use Rice Instead: switch the noodles for your favourite rice if you prefer.
- Use leftover chicken (or turkey): shred the meat and add with the noodles.
What to Serve with Chicken Teriyaki Noodles
This chicken noodle stir fry is a complete meal on its own, but you could also serve it with:
- Steamed edamame
- Spring rolls or gyoza with a spicy dipping sauce
- A fresh cucumber salad or slaw
- Kimchi, pickled ginger or chilli sauce for garnish
Got Leftovers?
Keep in the fridge for up to 3 days.
Freeze for up to 3 months. This dish is best served freshly cooked as freezing can affect the texture. However if you reheat carefully then frozen leftovers can still be tasty and convenient. Make sure to defrost thoroughly before reheating.
Reheat slowly on the stove or in the microwave with a splash of water, stirring regularly.
