A quick and easy meal inspired by fried rice, this sausage stir fry has tasty smoked sausage, crispy bacon, peas, carrots and scrambled egg all tossed with rice and a Chinese style stir fry sauce. Perfect for busy weeknights, this is a speedy dinner that beats ordering takeaway.

Sausage Fried Rice

I love a nice quick and easy stir fry for dinner. Just like my salmon and egg fried rice, this sausage fried rice is a staple recipe for weeknights. Easy to customise based on the ingredients you have to hand, and with a sauce made from pantry staples, its so easy to whip up in under 30 minutes.

Smoked Sausage Stir Fry is inspired by Chinese style fried rice. Savoury smoked sausage, bacon, peas, carrots and onion are stir fried with egg and rice then seasoned with a simple stir fry sauce. You can switch up the vegetables and use whatever kind of sausage you prefer.

In sausage stir fry I like to use ready to eat smoked sausage like this for ease but you can also use hotdog sausages, chorizo, Kielbasa or really any kind of sausage as long as it is already cooked. You can even use vegetarian sausage for this fried rice.

Ingredients

  • Smoked Sausage โ€“ I use ready to eat smoked sausage (like Mattessons) but you can use any type of cooked sausage.
  • Cooked Rice โ€“ Day old cooked rice is best for fried rice but you can use freshly cooked in a pinch. A packet of microwave rice also works really well โ€“ just add straight to the wok there is no need to pre-cook.
  • Bacon โ€“ optional, but adds a nice savoury smokiness. Leftover cooked ham also works well.
  • Peas โ€“ I use frozen.
  • Carrot
  • Onion
  • Eggs โ€“
  • Spring Onion/Scallion โ€“ separated into white and green parts.
  • Garlic
  • Five Spice Powder
  • Oil โ€“ a neutral oil for frying like vegetable or groundnut.
  • Stir Fry Sauce:
    • Rice Wine or Sherry Vinegar
    • Light Soy Sauce โ€“ or all purpose soy.
    • Sesame Oil
    • White Pepper

Serving and Storing

Sausage Stir Fry is a complete quick and easy meal as it is, but you can also serve it as a side dish for other dishes like you would fried rice.

I love to use peas, carrot and onion in my sausage stir fry โ€“ they are vegetables I typically always have in my kitchen (I typically use frozen peas) but you can swap them out or add in extra veg depending on what you have at home or need to use up. Diced bell pepper, mushrooms, shredded cabbage and broccoli are all great in stir fry.

If you want to make a vegetarian sausage stir fry you can use vegetarian sausage and just leave out the bacon.

I typically use white basmati rice for sausage fried rice, but you can use brown rice or even cooked quinoa.

Ingredients
 

  • 160 grams (5.5 oz) Smoked sausage, sliced - ยพ cup or 5.5oz
  • 2 slices streaky bacon, diced
  • 1 cup (7 oz) Cooked rice - about 200 grams
  • 1 cup (5 oz) peas - about 130 grams
  • 1 large carrot, diced
  • 1 onion, diced
  • 2 spring onions sliced and divided into white and green parts
  • 2 cloves garlic, diced
  • 1 tsp five spice
  • 2 eggs, beaten
  • 1 tbsp groundnut or vegetable oil - for frying

For the Stir Fry Sauce

  • 1 tbsp rice wine - or sherry vinegar
  • 2 tbsp light or all purpose soy
  • 1 tsp sesame oil
  • ยผ tsp white pepper

Instructions
 

  • Get all ingredients prepped and ready to go before you start cooking. Fried rice style stir fry is designed to be cooked quickly over a high heat.
  • Heat oil in wok or deep frying pan over a high heat then fry the diced bacon for 2-3 minutes until just starting to crisp.
  • Add the diced onion and white parts of the spring onion and stir fry another 1-2 minutes.
  • Then add the carrot, garlic, peas and sausage. Sprinkle over the five spice then stir fry 2-3 min stirring well to mix all the ingredients together and ensure the vegetables brown but don't burn.
  • Create a well in the centre of the wok then pour in the beaten eggs. Stir as they cook to scramble then stir through the vegetables.
  • Stir in rice then pour over the sauce ingredients, continue stir frying and stirring for another 2-3 minutes to toast the rice and warm the sauce.
  • Add more soy sauce and sesame oil to taste if desired and scatter over the sliced green spring onion to serve.
