Ingredients

  • 300 grams chicken breast or thighs
  • 300 grams Stir fry veggies I like a mix of tenderstem broccoli, green beans and shredded carrot
  • 2-3 nests dried noodles 1 nest per adult portion, ½ nests for young kids
  • Toasted peanuts for topping optional - see notes for how to prepare
  • 1 tbsp vegetable oil for frying
  • 1 tsp soy sauce
  • 1 tsp Five Spice

Teriyaki Stir Fry Sauce

  • 1 tsp ginger paste or ½ inch grated per tsp
  • 1 tsp garlic paste or 1 minced clove per tsp
  • 2 tbsp soy sauce use reduced sodium soy sauce for kids
  • 1 tbsp honey
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil

Instructions

  • Thinly slice the chicken then sprinkle over 1 teaspoon each of soy sauce and Five spice and toss to coat.
  • Heat the oil in a large wok or frying pan and add the chicken. Stir often as it cooks.
  • Once the chicken is browned, add in the veggies.
  • Cook for about 3-4 minutes more until the chicken is cooked through and the vegetables are softening.
  • Meanwhile, cook the noodles according to packet instructions. Then mix the sauce ingredients.
  • Once the veg and chicken are cooked, stir in the noodles and pour over the sauce. Cook for a minute or two, stirring everything together.
  • Serve with optional toasted peanuts or sesame seeds.

Notes

To toast peanuts for topping, heat a tbsp of oil in a wok or frying pan and add the nuts. Cook, tossing often, until just browned. Remove with a slotted spoon and drain on kitchen paper. Once cooled slightly you can chop if preferred. You can make these first then use the pan and oil to prepare the rest of the recipe.

For reference, I have written this recipe to feed a family of 2 adults and 2 small children (or 3 adults). You can adjust the quantities as needed to feed your own family (or yourself with leftovers). There is also a handy slider on the recipe card to increase the portions.
