If youโ€™re craving something that feels like a treat but is fresh, wholesome and family friendly, these Mediterranean minced beef and hummus bowls are the answer.

This is a healthy fakeaway gyros inspired dinner made with lean minced beef, courgette, oregano and dill, simmered with tomato paste and finished with red wine vinegar for that classic Mediterranean tang. Served over rice with creamy hummus, crumbled feta and a quick Greek-style salad, it is the kind of easy summer dinner the whole family will love. Why You’ll Love This Recipe

This recipe is inspired by the flavours of Greek gyros, souvlaki and classic Mediterranean mezze, but simplified into an easy one-pan minced beef dinner that is perfect for busy weeknights.

It is also:

  • Ready in 30 minutes
  • Perfect for summer dinners
  • Great for batch cooking and meal prep
  • Family friendly and easy to customise

Ingredients You’ll Need

Full ingredients list with quantities is included in the recipe card below. These are some helpful notes about the main ingredients including some swaps and substitutes where applicable.

For the Mediterranean Minced Beef

  • lean beef mince โ€“ I prefer 5% fat for this recipe. You can use a higher fat content mince but you may wish to drain off some of the fat when cooking
  • courgettes (zucchini) โ€“ optional but they help bulk out the mince and keep it juicy, add an extra vegetable (Iโ€™m always aiming for 30 plants a week) and soak up all the tasty flavour without overpowering the dish.
  • red onion โ€“ or a couple shallots
  • garlic (fresh or powder)
  • dried oregano, dill and parsley โ€“ you can switch up or swap for fresh herbs if you have them
  • tomato puree (tomato paste in US)
  • Red wine vinegar โ€“ optional but helps lighten the flavour of the beef. You could also use lemon juice.
  • Olive oil โ€“ or a neutral oil for cooking
  • Salt and pepper

For the Quick Greek-Style Salad

  • Butter beans โ€“ swap for another white bean, or chickpeas
  • Tomatoes โ€“ you can use regular or cherry tomatoes
  • Red onion โ€“ or shallot
  • Cucumber โ€“ about half a regular English cucumber
  • Red wine vinegar โ€“ sub white wine or cider vinegar, or lemon juice
  • Olive oil โ€“ or a neutral oil for cooking
  • Fresh parsley โ€“ or swap in your favourite herb. Basil, dill or mint would also be lovely or try a mix

To Serve

  • Hummus โ€“ make your own or buy your favourite
  • Feta cheese, crumbled
  • Rice, flatbreads or crispy potatoes (fries would also work a treat!)

Tips and Variations

  • Swap beef mince for turkey, chicken or vegetarian mince for a lighter option.
  • Add some lentils or beans to the mince to make it go further
  • Add chopped olives for extra Mediterranean flavour.
  • Serve with warm pitta instead of rice for more of a fakeaway kebab or gyros feel.
  • Add a spoon of tzatziki alongside the hummus.
  • Make it low carb by serving with extra salad instead of rice.

Got Leftovers?

This recipe is perfect for meal prep.

Store the cooked minced beef in an airtight container in the fridge for up to 3 days. Keep the salad separate to maintain freshness.

Reheat the beef in the microwave or on the hob with a splash of water and assemble fresh bowls throughout the week. The beef mixture also freezes well for up to 3 months.

What To Serve With Mediterranean Beef Bowls

These beef bowls are really flexible but here are a few ideas of what to serve them with:

  • Fluffy rice
  • Warm flatbreads or pitta
  • Crispy roast potatoes or french fries
  • Extra hummus or tzatziki
  • A simple squeeze of fresh lemon

This is a great meal to serve family style so that everyone can make up their own bowl (great if you have fussy eaters at home!)

Beef and Hummus Bowls FAQs

Can I make Mediterranean minced beef ahead of time?

Yes. The beef mixture reheats well and is ideal for meal prep lunches or quick weeknight dinners. The salad can also be made ahead and stored in the fridge for 3 days.

Can I freeze the minced beef?

Yes, the cooked beef freezes well for up to 3 months. Defrost overnight in the fridge and reheat thoroughly before serving.

Is this recipe healthy?

This is a balanced, protein-rich dinner made with lean beef, vegetables and healthy fats from olive oil and hummus.

Can I make this dairy free?

Simply skip the feta or use a dairy-free alternative.
