Salmon Broccoli Pasta

If you need a family friendly dinner on the table in under 20 minutes then try this Salmon and Broccoli Pasta. With a few simple ingredients (and lots of customisation options) this is a great quick and easy meal to have up your sleeve for busy weeknights.

Ingredients

  • 2 Fillets of salmon about 120 grams / 4 oz per fillet
  • 200 grams Broccoli florets
  • 4 tbsp Cream cheese
  • 200 grams Pasta
  • 2 tbsp Lemon juice
  • 1/2 tsp Garlic granules
  • 1 tsp dried parsley or use fresh
  • Olive Oil for cooking the salmon
  • Salt and Pepper

Instructions

  • Cook the pasta according to the packet instructions. Add the broccoli for the final 4 minutes of cooking.
  • Season the salmon with salt, black pepper and a dash of olive oil. Air fry at 180c for 10 minutes or pan fry. Use a fork to flake it into bite sized pieces.
  • Drain the pasta and broccoli, reserve about a cup of the cooking water.
  • Add cream cheese to the warm pan with lemon juice, garlic, parsley, salt and black pepper. Add 2-3 tbsp pasta water. Stir over a low heat until melted.
  • Add in the pasta, salmon and broccoli and stir for 1-2 minutes over medium-low heat until well combined. The sauce should be glossy and coat the pasta. Add more pasta water if you need to.

Notes

This recipe is intended to make two adult and one or two child portions (depending on age). Use your own judgement if you need to increase the amount of pasta etc or you can use the slider on the recipe card to adjust all ingredients by portion size.
