Easy Sausage Traybake (Perfect for Sausage Sandwiches)

This easy sausage and peppers traybake roasts juicy sausages with sweet peppers and onions on one pan. Perfect for stuffing into crusty baguettes for quick sausage sandwiches or serving as a simple weeknight dinner.

Ingredients

  • 8 sausages
  • 3 bell peppers
  • 1 large red onion
  • 2 tsp Italian Herb Blend or just oregano
  • 1 tbsp olive oil
  • salt and pepper

Instructions

  • Preheat your oven to 200°c/180°c fan/Gas 6/400°F.
  • Slice the peppers and onions and sprinkle with the dried herbs, olive oil and a dash of salt and pepper. Toss to coat before arranging on the baking tray and add the sausages.
  • Cook for 20 to 25 minutes, tossing halfway through, until the sausages are cooked through and the peppers and onions are soft and beginning to caramelise.
  • Serve and enjoy!

Notes

Sausages - I like to use Cumberland style pork sausages, but whatever sausages you prefer will do. You may be able to reduce the cooking time if using meat-free sausages - check the packet for cooking instructions.
Serving - The best way to serve sausages and peppers (imo) is in warm crusty baguettes spread with mayo and dijon mustard or pesto. You can also serve over rice, pasta or mashed potato.
