Baked Boursin Tomato Pasta

Pasta Pot
Spatula or wooden spoon
- 300 grams pasta
- 150 grams Boursin cheese
- 400 grams tin of cherry tomatoes or chopped tomatoes
- 2 red onions sliced
- 2 red peppers cut in 1 inch pieces
- 1 tsp olive oil
- handful fresh basil chopped or torn into pieces
- salt and pepper to taste
Preheat oven to 200℃/400℉
Place the whole unwrapped Boursin cheese in the centre of a medium baking dish.
Scatter the chopped pepper, courgette and sliced onions around the cheese, then pour over the tin of cherry tomatoes, including all the tomato juice.
Sprinkle the whole dish with a pinch of salt and pepper and a drizzle of olive oil then bake in the preheated oven for 20 minutes, until the tomatoes are beginning to burst and the cheese is becoming golden on top.
Meanwhile, cook the pasta until al dente according to package instructions. Reserve a cup of cooking water before draining.
Use a spatula or large spoon to mix the melted Boursin together with the tomatoes, peppers and onions to create a creamy sauce. Stir in the cooked pasta along with a couple tablespoons of pasta water and the fresh basil.
Stir together until the pasta is evenly coated in sauce - you may need to add more pasta water to loosen the sauce.
