Whipped Cottage Cheese

- 300 grams cottage cheese
- 1 tbsp honey or sweetener of choice
- 1 tsp vanilla essence
For the topping
- 1 cup fresh raspberries
- 2 tbsp chopped pistachio
- 2 tsp honey
Add the cottage cheese to a blender with a tablespoon of honey and teaspoon of vanilla essence.
Blend until smooth.
Spoon into bowls, then top with fresh raspberries and pistachio. Drizzle with honey to serve.
Use sweetener of your choice - agave, maple syrup or regular sugar all work. Feel free to adjust to your preferred level of sweetness.
