Heat the oil in a large pan over medium heat and add the diced onion. Cook for about 5 minutes until soft, then add the turkey mince.

Cook the mince until browned, breaking up with a spoon as you go. It doesn't need to be fully cooked at this point but caramelisation equals more flavour.
Once the mince is browned, stir in the garlic, tomato paste and spices and cook for 1 more minute then tip everything into the slow cooker.
3 cloves garlic, 2 tbsp tomato paste, 1 tbsp chilli powder, 1.5 tsp cumin, 2 tsp oregano
Add the rest of the ingredients to the slow cooker, including the water and chicken stock cube. Give everything a good stir then pop the lid on and cook on high for 4 hours or low for 8 hours.
2 400g tin chopped tomatoes , 1 400g tin black beans, 1 400g tin kidney beans , 2 medium carrots , 2 bell peppers, 1 198g tin sweet corn kernels, 1 chicken stock cube, ¼ cup water
If you prefer a thicker chilli, cook on high with the lid off for the final 20-30 minutes.
Season to taste then serve with rice or tortillas plus your favourite toppings.
