Irn Bru Syrup
- 750 ml bottle of 1901 original recipe Irn Bru
To make the Irn Bru Syrup
Pour the Irn Bru into a small saucepan and bring to the boil over a medium-high heat. Allow to simmer for about 20 minutes, until the liquid volume has reduced by half.
Allow to cool before serving. Store in a jar or bottle in the fridge for up to 3 weeks.
To Make the Margaritas
If desired, rim your glass with salt - run a lime wedge around the rim to dampen it and dip in a small dish of flaky sea salt (you can also rim with sugar or a mix of both). You can serve these cocktails straight up in a margarita glass or on the rocks in a tumbler. Blend the ingredients with ice for a frozen version.
Fill a cocktail shaker with ice and pour over the tequila and Irn Bru syrup. Squeeze in the juice of 1 lime.
Put the lid on the shaker and shake really well - the outside of the shaker should get so cold it's almost uncomfortable to touch.
Strain into your chosen glass and enjoy!
To make a pitcher of Irn Bru Margaritas, simply multiply the ingredients by 10 and add to a jug filled with ice. Stir well and let it sit for 5-10 minutes before pouring into salt-rimmed tumblers over ice.
